As a vegetarian for many years, annually I claimed the one thing I never missed at Thanksgiving was the turkey. I certainly never felt a need to replace it with some crazy meat substitute. Now that I eat it, turkey’s quantity on my plate is a bit more than a garnish and it is the circle point for a star-studded cast of side dishes. Unfortunately, most of those sides are dense carbohydrates and the typical American stove top medleys barely lend homage to the beautiful harvest element of the day’s feast.

As you start planning your menu for the big day, play around with some of this weeks vegetable packed sides including Caramelized Onions, Acorn Squash & Apples with Pomegranate Gremolata, vegan Coconut Creamed Greens, String Beans with Mustard Yogurt Sauce, Lemon-Ginger Cauliflower and Lemon Roasted Brussels Sprouts.

A few starchier, yet protein packed options include the creamy Fennel Scalloped Potatoes and Nutty Quinoa.

Amongst the warm sides, consider seasonal salads such as the Coconut Kale Salad and the Creamy Blue Pear Salad.

Protein rich vegetarian dishes will please meat and non-meat eaters a like, including the Butternut Squash & Quinoa Salad, perfect for lunch or as a protein rich side. The Winter Squash Lasagna is a one dish meal in our house.

For a pre-turkey meat dish, try a quick Pan Roast Beef with Cranberry Cherry Syrah Sauce- make a triple batch of the cranberry sauce. Freeze it and serve warm on the big turkey day. Leftovers of the beef & sauce are perfect layered into the Cranberry Roast Beef Sandwiches.

With extra Cranberry Sauce, do not hesitate to whip up the Cranberry Persimmon Parfait with Molasses Pumpkin Granola.

For a lower glycemic yet sweet start to your day try these almond based Ginger Apple Muffins.

Coconut Fried Shrimp with Pomegranate Cocktail Sauce are perfect as a twist on a shrimp cocktail appetizer or as a main dish to give you a break from the turkey feast.

Get ready to dive into the next few weeks of harvest feasting!
