Sorrel Salmon with Carrot Baked Brown Rice & Beets

Start this colorful meal with the Carrot Brown Rice and place in the oven. Next, slice the beets and start braising. Blend the sorrel sauce. Prepare the salmon. Increase the heat of the oven and add the salmon. If the beets have cooled, warm them just prior to serving.

Carrot Baked Brown Rice

Baking brown rice leaves you with a fluffy product that needs little attention. I love the flavor addition of carrots, but you certainly could leave them out. I use broth for a bit more flavor, but water is a reasonable substitute.

Bright almost citrus infused sorrel balances the sweet richness of wild salmon. If you cannot find sorrel, arugula with lemon zest is a reasonable substitute, although know that it is a completely different flavor.
