Ginger Chicken, Snow Peas & Broccoli over Coconut Rice

Start cooking the coconut rice. Slice the chicken and marinate. Then prepare the vegetables. Caramelize the onions first. Saute the chicken and add the snow peas. Finish the onions by adding the broccoli. Serve both dishes piled high on top of the coconut rice.

Coconut Rice

Brown rice is steamed and simmered in either coconut juice or the coconut liquid that may be leftover when cooking with just the “cream” of the full fat coconut milk. Just remember not to shake the coconut milk and the cream will scoop off easily.

Ginger Chicken over Snow Peas

A simple Asian ginger marinade livens up chicken which is sweetened up with a pile of stir fried snow peas. Substitute green beans, snap peas, broccoli or something tasty of your choice for the snow peas if you can’t find them.

Caramelized the onions into a deep golden, then fold in the broccoli. A splash of broth or white wine will bring them together in steamy goodness.
