Tequila Lime Shrimp Taco Salad

Soak the skewers if they are wooden. Marinate the Shrimp. Prepare all of the Taco Salad ingredients and arrange in a salad bar fashion for diners to assemble their own. Whisk up the Spicy Coconut Cilantro Dressing. Skewer and grill the shrimp on each side. Give everyone a plate to pile up their salads, a skewer of shrimp or two and the dressing to drizzle on the side.

The essence of a margarita marinates shrimp that is grilled and finished with lime and a sprinkle of coarse salt. Cook on the grill or with your broiler until thoroughly pink and just barely firm to the touch.

Drizzle on salads, tacos, and even as a marinade. Start with just a bit of the jalapeƱo until it is the spiciness you prefer. If it tastes too spicy, no worries as the flavors spread well when added to dishes.
