Week of June 10, 2012

Oh Dad’s! I must admit I have a couple of good ones in my life. Starting with my own Dad, who I have had a blast hanging out with this past week on vacation. Visiting with him, talking about the garden, going wine tasting, and listening to him play piano while my two year old Juliette sits mesmerized by his side have all been highlights to say the least. Since she has come into our life, I feel so blessed to watch my husband Xerxes as he becomes such a sweet first time Papa. It is a joy to see how excited & proud he is of all of her “firsts”, how quick he is to comfort her or solve her tiny dilemmas and how he seizes any opportunity to love her up. To honor them both this week, I wanted to share some of their favorites.

As I thought about the stereotypical ‘dad meals’ I considered meat & potatoes such as the Argentine Steak Dinner, which they both would love- of course. It is part of the dad badge of honor. But, as I dug deeper through the possibilities I realized while it is not considered ’father’s day fare’ these two guys are actually huge salad lovers. They would each happily eat one daily, including the Wedge Salad, vibrant yet creamy Horseradish Dressed Greens, and last but not least a family favorite Taco Salad. I fancied this last one up a bit with grilled Tequila Lime Shrimp and Spicy-Coconut Cilantro Dressing. My Dad also requested the Grilled Potato Salad, so that of course made it on the list too.

Xerxes loves pretty much anything Italian, so I had to include Goat Cheese & Kale Pasta with one of his favorite sauces, Winter Puttanesca. When asked to choose between pizza or pasta he usually cannot, so I would also whip up a Caramelized Onion & Broccoli Pizza, feel free to add cheese if you like. As well as the Artichoke Antipasto Toss that pairs up so nicely with pizza.

My Dad is a sardine lover, hence the Sardine Sandwiches, but Xerxes would probably be happy with creative ways to use the leftovers such as a Spring Fiesta Salad with a generous dollop of Feta-Guacamole.

They both love a good Eggs Benedict breakfast, but I have a feeling the Cajun Egg Sandwiches would make them smile big. Of course, whether they admit it or not they both like a little something sweet and would be excited to see Almond Pancakes with Maple Blueberries at the breakfast table. Actually, these two peas of a pod would be even happier if those blueberries were huckleberries, but we’ll have to save those for another celebration!

Whether they are new to fatherhood or so seasoned they have been given the status of Gramps or Grandpa give the men in your life a huge hug and something good to eat. They are each so unique as they provide us all with support, guidance, great memories, love and laughter. Cheers to each of the dad’s out there and may they have a few delicious meals coming their way too!
