Sardine Sandwich with Horseradish Salad

Shred the carrots, wash and dry the lettuce. Whisk the horseradish dressing. Toss and mash together the Sardine Sandwich filling. If taking on the go, assemble the sandwich and package the salad dressing separate from the greens. Toss the salad at the last minute.

Sardine Sandwich

If you are a tuna sandwich fan, try this more sustainable healthy option. Sardines have a lower mercury level and put less strain on the environment then tuna. Once they are mashed up with a bit of mayo you will hardly know the difference. Try smoked sardines for a bit of extra flavor.

Pungent horseradish plays well with crisp lettuce greens for this simple flavor packed salad. Add more horseradish depending on the strength of the flavor. It varies from root to root, so add more to your personal taste. Use a veganaise mayonnaise or your preferred creamy spread instead of the yogurt to make this vegan.
