Skillet Potatoes

Flavorful potatoes, thinly sliced sear up quickly in a skillet- perfect for a starchy side or to use with eggs for breakfast. This is an excellent use for those rich flavored Farm Share potatoes. If they start at crazy sizes just thinly slice them evenly and toss in any tiny potatoes unsliced.

Ingredients

  • 2 teaspoons olive oil
  • 2 cups potatoes, thinly sliced
  • 1 tablespoon butter, salted, optional
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Heat a skillet over medium heat. Add in the olive oil and sliced potatoes. Sear the potatoes for 2-4 minutes. Flip them lightly and then allow them to sear again for a couple of minutes. Repeat until the potatoes are tender and cooked through.

Add a bit of butter half way through to increase flavor if desired. Sprinkle with salt and pepper to taste.
