Fish Tacos with Black Beans & Pico de Gallo

Start with the Black Beans, slowly simmering them. Prepare the cabbage and toss with lime juice. Heat up a skillet or the grill for the fish. Wrap up the tortillas in foil to warm on the grill or in the oven. Prepare the fish. Start chopping the salsa. As soon as the grill/pan are hot, cook the fish. Toss the salsa and assemble the tacos with the beans inside or on the side.

Black beans are lightly spiced up and ready to accompany any Mexican dish. Use a can of black beans or soak & cook dried beans. Add more spices as desired to taste.

A thick slice of sustainable white fish such tilapia fillets, Pacific Cod or Halibut work well seared on a grill or in a cast-iron pan. The seasonings are simple and the tacos are tucked in with a generous pile of cilantro-lime slaw.
