Chipotle BLT Wraps with Apricot Celery Salad

Sear the bacon first. Chop up the tomatoes, lettuce, celery and apricots. Make the dressing. Make the chipotle spread. Toss the salad. Assemble the wraps. Store separately to take on the go.

The secret to an amazing BLT is the ingredients used. Do not skimp on the best quality bacon, lettuce, mayo and tomatoes and you will not go wrong. The chipotle and tortilla just gives the classic dish a bit of simple sass.

Apricot Celery Salad

The crunch of the celery against the creamy sweetness of the apricots is delightful. Try this salad when you are ready to branch out of the ordinary green salad and you have a few apricots needing attention. Other stone fruits, such as peaches may work as well, but I have yet to try it.
