The Food
It’s still hot. And yet it’s back to school time. Let’s gather the harvest for quick and sassy dishes that will bring your family together for these final weeks of vacation or first few weeks of the school year.
Quinoa the go to grain for speedy, vegetarian dishes. The grain is cooked with veggies and tucked into tortillas in the Zucchini, Corn, & Quinoa Wraps with a refreshing side of Cantaloupe & Cucumber Salad. Make a big batch of the salad for your back to school lunches with easy homemade Fennel Crackers and Split Pea Spread. Lunchables will be jealous.
Raspberry Salmon Salad plays with fresh raspberries to make a divine dressing that can be used again for lunches the next day. Leftover salmon is best folded into a rich salad to tuck into bread for Salmon Sandwiches.
Asian Plum Sauce & Asian Beef Lettuce Wraps are great for each diner to fold up their own little happy meal in a lettuce envelope. Red Chili Green Beans are on the side and the spicy sauce of course could be left off for any spice-less young ones to nibble on.
