It’s still hot. And yet it’s back to school time. Let’s gather the harvest for quick and sassy dishes that will bring your family together for these final weeks of vacation or first few weeks of the school year.

Quinoa the go to grain for speedy, vegetarian dishes. The grain is cooked with veggies and tucked into tortillas in the Zucchini, Corn, & Quinoa Wraps with a refreshing side of Cantaloupe & Cucumber Salad. Make a big batch of the salad for your back to school lunches with easy homemade Fennel Crackers and Split Pea Spread. Lunchables will be jealous.

Raspberry Salmon Salad plays with fresh raspberries to make a divine dressing that can be used again for lunches the next day. Leftover salmon is best folded into a rich salad to tuck into bread for Salmon Sandwiches.

Asian Plum Sauce & Asian Beef Lettuce Wraps are great for each diner to fold up their own little happy meal in a lettuce envelope. Red Chili Green Beans are on the side and the spicy sauce of course could be left off for any spice-less young ones to nibble on.

Vegan and protein rich Thai Almond Broccoli compliments the chilled Thai Watermelon Soup, perfect for hot summer nights.

Preparing your entire meal on the grill should be done more often than not. The Parmesan Grilled Eggplant, Grilled Herb Bread (or Grilled Polenta for gluten-freers) and a Grilled Zuc & Peach Salad will do the trick.

Breakfast of Peach Custard-Baked Oatmeal can be multiplied for several days of quick and easy breakfasts for a family on the go. The Tortilla Egg Wrap is a personal favorite, since it whips up speedy and can be shoved into hands that claim no time to eat as they run out the door in the morning. A Peach Smoothie can accompany the wrap on the go too.

Whether you are still indulging in vacation days or are back to the school grindstone, take the time to eat with pleasure and to eat together. I encourage you to commit to a daily meal together or as many meals together as you can get. What a great way to raise our kids, around the table, dining and celebrating food as often as possible.
