Roasted Grape Chicken with Glazed Beets & Arugula

Prepare the chicken for roasting and stuff with the grapes, onions and more. As soon as it is in the oven, prepare the beets and braise in the skillet. After the chicken has come out of the oven and rested for 10 minutes, finish assembling the beets with the arugula and goat cheese. Serve with French bread or Wild Rice if you would like an extra carbohydrate.

Roasted Chicken & Grapes

Stuffed with herbs and fresh grapes this chicken is roasted until crisp as the juice plumps up the grapes and they explode into a tantalizing sauce. Any herbs or grapes will do. The preparation time is just a few minutes to put everything together. The hour plus is based on the fact that a whole chicken will roast from 45 minutes to 1 1/2 hours depending on the size and oven.

Glazed Beets & Wilted Arugula

Pan braise the beets, toss with baby arugula and a crumble of goat cheese. A sprinkle of your favorite nuts instead of the goat cheese will give you a nice vegan and dairy free alternative.
