The Food
After the holidays, most of us are craving a break from the rich, heavy foods that the season so generously offered. Sitting here, I find myself wanting to say good-bye (at least temporarily!) to sugar, flour, dairy and even meat. I will hardly be strict on myself. I did not make any resolutions in regards to food restriction and I do not believe this is the time of year for a strict detox. Rather my menu will be built around produce and non-meat based foods such as these Beets & Seeds Burgers with Avocado Tahini Sauce or the Roots, Shoots & Lentils with Lemon Spinach Salad.
Whether or not you have made resolutions, come sign up for the Healthy Body, Healthy Planet Challenge and dive into the adventure with us as we take action steps to reduce our consumption of processed foods and indulge in more produce. It is free to sign up for the 30 days of email support.
While a slight break from rich meats is a welcome change, a bit of extra protein will still be welcome this week. Simple pieces of chicken stir fried with a Spicy Almond Sauce and a Sesame Stir-Fry on a big pile of Brown Rice is deeply satisfying.
For fish this week, lemons & onions are all that a simple fillet of salmon needs when steamed in parchment paper. Pair the Salmon wrapped in Paper with Roasted Cauliflower, Butternut Squash and Greens to complete the meal.
Leftover salmon is perfect tossed with the Avocado Tahini Sauce for the Avocado Tahini Salmon Salad to take on the go for lunch. Additional beets are blended into a Beet Hummus for lunches with veggie sticks and gluten-free Almond-Herb Crackers.
A hearty Black Bean Soup will satisfy the comfort needs that this chilly season demands. Skip the ham or bacon for a vegan option and pair with a refreshing Citrus & Beet Salad. Extra black beans and Mexican toppings are perfect for a breakfast of Huevos Rancheros.
Even though it is not a warm option on chilly days, I find that when I am eliminating sugar having a Kale Smoothie in the initial days that sweet cravings strike helps keep me on track and in balance.
Remember to join us for the Healthy Body, Healthy Planet Challenge. And always feel free to pin, tweet or like any of the recipes that you are planning to make this week.
