Week of January 13, 2013

The second week in the New Year is still a time to refresh after the holiday indulgence. Reducing your intake of sugar, refined carbs, gluten, rich dairy and meat is a great way to give yourself a little break even if you are not planning any dramatic dietary changes. As a quick reminder, the Healthy Body, Healthy Planet Challenge is still under way with new incites about how to eat your way to a better planet. Please join us on the adventure!

Going a bit vegan is an easy option this week with the Rainbow Pesto Pasta, Squash Tortilla Soup, and Black Bean Tacos.

Lighter cuts of beef, such as flank, are perfect tossed with broccoli florets and oranges in the Broccoli Orange Beef Stir Fry.

Extra rice finds use in the only dish that uses dairy this week: Greek Greens Bake. It is delightful slathered with the vegan Tomato White Beans and Olive & Pine Nut Topping. Additional white beans, stretch tuna into a White Bean Tuna Salad that is perfect on top of extra Lime Slaw. For dinner, try the Slaw along with the vibrant Seafood Enchiladas.

Extra Brilliant Green Enchilada Sauce is perfect for breakfast with the Veggie Chilaquiles and Tofu Scramble.
