Did you have a chance to celebrate one of the many events last week? If not, Chinese New Year is still here for a few more days and the Orange Ginger Prawns with Rainbow Saute are ideal for bringing happiness. I am not making this up, the word for shrimp or prawns sounds similar to laughter and is enjoyed during the new year celebrations to ensure happiness. The Warm Chinese Chicken & Tatsoi Salad also makes for a joyfully quick weeknight dinner. Just use another green if tatsoi is not available.

While Turnip Cakes are a Chinese tradition, these little Turnip Fritters are a great non-Chinese ode to them. Serve the fritters with Coconut Creamed Chard (or even better, use the turnip greens) on a bed of Coconut Rice.

Black Bean Soup is soothing on chilly days and fast to put together when your in a hurry. Pair with a favorite salsa or make this seasonal Sunchoke Salsa instead. Bake up Kale Chips & Homemade Tortilla Chips as the perfect crispy finish to dinner. Leftover salsa and extra black beans turn into lunch as Black Bean Tacos and Sunchoke Salsa to take on the go.

Citrus is certainly making a refreshing splash these days. A Fennel-Blood Orange Salad makes a couple of appearances. You certainly can use whatever oranges you have available, with or without the dark crimson shade. Pair the salad with a Blood Orange Quinoa for a quick lunch on the go. Alternatively, it is perfect for dinner with Orange Broccolini, Quinoa Patties and Avocado Cream for dipping. Extra Avocado Cream becomes a sassy dipping sauce for the Tortilla Egg Wraps for breakfast.
