Peaches n' Chicken with Summer Squash, Plum & Avocado Salad

Start with the chicken and peaches. As soon as the chicken is searing, start washing + preparing the salad ingredients and dressing. Toss the salad with the dressing just before serving with the chicken.

Peaches 'n Chicken

The soft cooked peaches become a perfect simple topping for the chicken. A half of chicken will usually serve two and is easier to grill. Ask your butcher to cut it down the middle to save time and hassle.

Plum, Summer Squash & Avocado Salad

Pieces of summer come together in slices within this salad. Basil plays with the plums. Avocados add a rich, creamy bite. Yellow Summer Squash is enjoyed raw & sliced thinly. Toasted Almonds give crunch. This salad is tasty with or without an extra sprinkle of creamy cheese like goat or salty such as feta.
