Herb Tilapia with Melon Caprese and Squash Pancakes

Shred the summer squash and drain with the salt. Take out the pan for the fish and a separate pan for the pancakes. Get out all of the ingredients to finish the pancakes and prepare the fish. Make the Melon Caprese Salad, set aside. Start to sear the pancakes, as they finish place them in a warm oven. When the pancake making process is more than half done, start searing the fish. Serve altogether.

Summer Squash Pancakes

These are a favorite way to use up the abundance of summer squash or zucchini, whether yellow or green. These pancakes store nicely, just toast them up to enjoy the next day for breakfast or in a lunch on the go. With only a few tablespoons of batter the pancakes are mostly veggies rather than a traditional pancake. If you prefer more of a batter-based pancake, simply double the flour, egg and cheese.

Gather herbs from your garden, almost any combination will do. Basil, mint, parsley, oregano, thyme, dill, or whatever smells delightful. Try another type of fish if you like, such as trout, salmon, or halibut. Be sure to use a nice quality olive oil or butter, since the simplicity of this dish highlights every flavor that is added.
