Pecan Crackers, Chipotle Goat Cheese and Apple Salad

Soak the chipotle pepper if necessary. Blend, roll out and cut up the Pecan Crackers. While they bake, blend the chipotle with the goat cheese. Chop and toss the salad. Package to take on the go or serve altogether.

Pecan Crackers

Pecan meal easily becomes crispy, delightful crackers. Add extra seeds and flavors as you like. If the dough seems to fall apart, just press and piece it together, cut into crackers and then bake them up. If you do not have pecan meal, blend up about 2 cups of whole pecans in a food processor until the mixture is crumbly. Do not blend too long or the oils will release and it will eventually turn into pecan butter.

Chipotle Goat Cheese Logs

Smoky, spicy chipotle is mellowed in the creamy cherve goat cheese. Roll in ground pumpkin seeds with just a pinch of ground chile or chipotle powder. Spread onto bread or crackers.

The dressing is cinnamon-spiced and simple to toss together. Raw or candied pecans can be used in this recipe. Candied are easy to purchase or try making them from scratch by following our simple recipe for Citrus Candied Pecans.
