Turnip Greens Dip

Imagine spinach dip, with a bit more bitter bite. If you are not a bitter green lover, substitute spinach instead. The photo is shown with turnip chips which is a great way to use the turnips, although they are delicate and not very good at picking up this hearty dip. Try instead, dolloping the dip on a cracker and the sprinkle with the chips for a tasty lunch, snack or appetizer.

Ingredients

  • 1 bunch turnip
  • 1 teaspoon olive oil
  • 1 cup onion, minced
  • 4 ounces cream cheese
  • ¼ cup greek yogurt
  • ½ cup parmesan cheese, grated
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Preparation Instructions

Remove the turnips and set aside for another use, such as the turnip chips.

Soak the turnip greens in a large bowl of water. Shake to release any grim or dirt. Pull the greens up out of the water and repeat with fresh water until it appears clean. Shake and pat the greens dry.

In a saute pan over medium heat, add the olive oil. As soon as it is shimmering, toss in the minced onion. Saute lightly for 5-10 minutes until slightly golden.

Meanwhile, thinly slice and mince up the turnip greens. Add the greens to the cooked onions until the pan is full. As soon as the greens wilt down, remove and continue adding more greens until they are all wilted.

Warm the cream cheese and yogurt in the saute pan. Once it is mostly melted, fold in the greens & onions. Finish with the grated parmesan, salt & pepper to taste.

Place in an oven safe serving dish. Warm briefly just prior to serving with an extra sprinkle of cheese on top.
