Let’s turnip the love!
I adore the fact that Valentine’s Day arrives in the middle of what is often the coldest (and arguably the most miserable?) time of year as it shouts out to each of us to remember: love. When we are bundled up and spending time inside, the best way to love ourselves up is with warming nourishment to get us through these chilly days. Although, strawberries may seem all the rage for V-day, try instead reaching for some seasonal beauties.
For this big week of love, I am a fan of magenta beets, purple topped turnips, blood oranges and colorful chard. That chard becomes especially festive in rainbow or red, but if you have better luck finding kale or collards any of the chard recipes this week will be happy with any dark leafy green. All of these seasonal delights leads us to a parade of possibilities starting with Turnip Fritters, Coconut Chard & Rice and a morning celebration with Red Velvet Beet Granola & Smoothie.
In last week’s devotion to fennel, I failed to mention it is actually an aphrodisiac. Oui, oui! If you want to grab some of those recipes just hit the left arrow on this food for the week page to head over to last week’s meal plan. Although, the Braised Fennel Turnips & White Beans with Blood Orange Quinoa may be all you need for an extra aphrodisiac boost. For lunch, whirl up extras into the Fennel White Bean Spread and smear it on your favorite bread or crackers to take on the go.
Let’s get romantic with fancy-schmancy sounding dishes that are simple to master such as the Cabernet-Cocoa Steak with Cherry Chili Chard and the Coconut Salmon with Coconut Chard. Double up on your salmon at dinner to whip it into this Avocado Tahini Salmon Salad for lunch the next day.
Of course, this week is incomplete without chocolate and I am a huge fan of it’s savory applications such as the Warm Cocoa, Apple & Chard Salad and the Cacao Nib Beet Slaw each drizzled with the Cocoa Vinaigrette
For a final delightful breakfast, whip up these sassy Cherry Amaretto Scones with Cream Cheese & Nutella smeared all over them.
And here are a few extra treats to make for your loved ones: Cocoa Almonds, Chocolate Beet Cookies, and Cocoa Almond Truffles. Each one is sweet, but not cloyingly sweet and they will be the make great snacks, breakfasts on the go or a perfect ending to any meal.
