Week of February 16, 2014

At a recent trip to the grocery, I found piles of artichokes, asparagus, and of course strawberries. Did spring arrive? Nope. All of this produce was coming from South America as each small sign stated. Personally, if I am going to eat food from Peru I would rather be in that beautiful country to experience it first hand.

Hope I didn’t rain on any asparagus-loving parades, but there is an exciting part to this story. Even though it is cold, in the Northern Hemisphere we are still producing delicious veggies worth diving into and we are merely weeks away from being able to harvest spring treats in abundance. I am grateful you have joined me in eating all of that seasonal goodness.

With a bit of patience, while we wait for artichokes & strawberries, we can dine on the delightful comfort foods that taste best in winter. The Chicken & Slicker Dumpling Soup is a bowl of warming love to cup in your hands and slurp up with delight. Because soup screams comfort we also have the vegetarian Broccoli Cheddar Soup with Sweet Potato Croutons on the menu.

Even when avoiding produce from Mexico, why not take a bit of inspiration from their beautiful cuisine with the Roasted Squash & Bean Tostadas with Grapefruit-Avocado and Sunchoke Salsas. Along with extra mashed sweet potatoes from the Broccoli Cheddar Soup you can make the Black Bean & Sweet Potato Quesadillas for an easy lunch. One of my favorite ways to toss together any leftover vegetables, beans, salsas and cheese is in the Winter Nachos. Mix and match some homemade south of the border ideas to make this week even easier.

Creamy Arugula Tilapia with Glazed Beet & Arugula Salad gives a classy ode to the upcoming spring season while still using cool weather produce. Enjoy the salad leftover for lunch paired with a
Nutty Quinoa. Additional Winter Greens Butter makes the
Creamy Herb Scramble a heavenly way to start your day.

Finally, dried figs can brighten up any winter morning with this Sunflower Fig Oatmeal and Whipped Coconut Cream breakfast.

We only have a few more weeks to enjoy all that winter offers— dive into the delights!
