Week of February 23, 2014

Another week of winter, another opportunity for delicious comfort food. Start the week with these Veggie Packed Meatloafs and enjoy leftovers transformed into Meatloaf Wraps for lunch. While Mashed Potatoes are always good to pair with meatloaf, mix it up this week with a easy to make flavor packed Celery Root Mash.

I love food puns. Always, send your favorites my way, please! Recently, as I was setting up a Pinterest board dedicated to my favorite tasty puns I wondered if anyone ever cooks up those puns? Not long after that thought, the Lettuce Turnip the Beet Wraps were born. Serve them with a side of Sweet Potato Fries and Lemon Poppy Seed Dressing to continue with the playful fun.

Those lovely wraps are packed with quinoa, which lately has been my go-to on days when I need to grab convenience for a quick & easy protein boost. Grain based salads such as the Red + White Quinoa Salad, are one of my favorite places to enjoy it.

A big pot of the Squash Tortilla Soup with Caramelized Onion Quesadillas and your favorite Mexican toppings and Feta Guacamole will satisfy for one meal or as leftovers too. Extra corn tortillas are ideal for the Eggs in Tortilla Cups.

For a playful vegan dish, try the Rainbow Chard Stir-Fry with Spicy Almond Sauce and Sesame Tofu. Of course, if you prefer a stir-fry of chicken or steak, that works well too.

Finally, bacon and shrimp are such good buddies aren’t they? Make a simple sauté of the two together and pair it with a glorious seasonal Roasted Garlic & Mizuna Salad (photo in this week’s email).
