White Bean & Artichoke Saute with Polenta Croutons

Cut up the polenta and toss in the oven. Once it is mostly roasted and toasted, sauté the white beans and artichokes. If taking on the go, serve altogether. You may even want to pair it with a favorite crumbly cheese, too.

Polenta Croutons

These are slightly addictive and a cinch to make, they just take their time in the oven. Use a tube of polenta or leftover polenta that you have chilled. Omit the parmesan cheese or use nutritional yeast if you want these to be dairy free.

A bit of sage, white beans & artichokes are tied together with garlic & olive oil. Freshly cooked white beans or artichokes work beautifully, but also keep it simple, with canned white beans and frozen artichokes. The fresh garlic & sage will liven everything up.
