Week of May 18, 2014

It snowed last week. No joke. But, the survivors in my yard: lilacs, allium and the salad greens tucked in the hoop house are each revived and ready to face the weather, again. Thankfully. Our apple tree however may not produce this year. Sadly.

Meanwhile, the day after the snow, I could smell steak grilling, because Coloradans just brush off their grills and pretend it is summer even on the dreariest of days. Fortunately, for most of you, the weather is a bit more appropriate for grilling and therefore let’s throw up the tops a week before Memorial Day and get back into practice lighting, searing and indulging in freshly grilled spring delights.

Let’s start with the Spring Burgers wrapped in lettuce or buns if you roll that way. Thread up these Asparagus Bacon Skewers and toss fat sticks of sweet potatoes on the grill alongside.

For a vegan grilled option, arrange steaks of Cauliflower and slabs of Polenta on the grill searing until crisp, while tossing together this White Bean & Artichoke Sauté. Mince up this Strawberry Salsa to decorate every element of this simple dinner.

If I am pushing the grilling season on you too early and you are still craving the slight warmth of comfort foods, I have more options for this week. Mushroom Stuffed Artichokes with Broccoli Ricotta Pasta will satisfy for dinner and the pasta takes a lovely turn as leftovers for lunch the next day. The comforting, Bright & Vibrant Seafood Enchiladas use last week’s enchilada sauce in a new way as well, paired with the Chipotle Sweet Potatoes.

Meanwhile, one of my favorite meals lately is the Creamy Spring Salad that we pair with Homemade Almond Crackers (or your favorite store bought version!) and a simple spread of Fennel, Turnip & White Bean Dip.

For breakfasts, grab extra broccoli, baby artichokes and a handful of greens for a simple, yet nutritious egg scramble. And since my daughter has been a bit ever too delighted by kiwis in the last few weeks, I just have to encourage a simple Kiwi Smoothie with make-ahead Strawberry Granola.

Spring, for all of its bewildering weather conditions is still delightful… especially when you simply close your ideas and take a big bite of it.
