Broccoli & Chard Scramble

A simple saute of chard & broccoli becomes breakfast when tossed with eggs or even tofu.

Ingredients

  • 1 cup broccoli, florets and pieces of stems, chopped
  • 4 leaves chard, roughly chopped into bite-size pieces
  • 1 teaspoon butter, unsalted, or olive oil
  • 3 eggs, or 4 ounces tofu
  • 1 pinch salt
  • 1 pinch black pepper, to taste

Serving Size: 2 People



 

Preparation Instructions

Heat a skillet over medium-high heat. Add the broccoli & chard with a splash of water and steam saute for about 5 minutes until they are just becoming tender and the water has cooked off.

Reduce the heat to medium and add the butter/olive oil. Beat the eggs or crumble the tofu and add to the skillet. Toss lightly until the eggs are cooked through or the tofu is hot.

Season to taste with a pinch of salt & pepper.
Serve immediately.

*If using tofu, try adding a generous pinch of nutritional yeast for additional flavor & nutrients.
