Memorial Day arrives, with it the whispers of summer begin. Salads and grilled items equal simplicity, freshness and ease, right? Never to be forgotten Memorial Day is also a time to celebrate the heroes who protect our home and allow us to enjoy these simple pleasures of this good life. Whether you have barbecue or picnic plans for Monday or the coming weeks, this is the meal plan that will help you celebrate the coming sunny season.
We officially dusted the grill off last week, but now we dive into further possibilities starting with main meals such as the Tequila Lime Grilled Shrimp Tostadas, Portabello Burgers, and Dijon Chicken Kebabs. Continue the fun with some sassy sides such as the Grilled Artichokes, Grilled Asparagus, and the Grilled Potato & Greens Salad. Simple dips such as the Yogurt Basil Aioli and the Avocado Cream tie everything together with a bit more charm, too.
I love tossing salads together and calling them dinner. It makes life even easier when those salads are fantastic make ahead options such as the Macaroni Salad, Massaged Kale Salad, Asparagus & Egg Salad and the Chopped Lentil Salad.
Every picnic, barbecue or bright & lazy afternoon deserves an appetizer such as the Herb & Goat Cheese Snap Peas. Take extra goat cheese (even better if the creaminess is leftover & flecked with flavorful herbs!) and stuff them into a simple Goat Cheese & Greens Omelette.
For a patriotic Memorial Day breakfast, whip up the French Toast with Maple Blueberries, Strawberries and Lavender Yogurt.
