Grilled Shrimp Tostadas

Soak the skewers. Prepare the marinade and toss in the shrimp. Cook the beans and prepare all of the ingredients for the tostadas. Start grilling the shrimp and then quickly sear the tortillas on each side on a cooler part of the grill. Serve with the beans and toppings and finish with the shrimp.

The essence of a margarita marinates shrimp that is grilled and finished with lime and a sprinkle of coarse salt. Cook on the grill or with your broiler until thoroughly pink and just barely firm to the touch.

Make your tostada feel like a salad with a little surprise below of beans and a crunchy tortilla. You can use as much or as little oil as you like for the tostada shells and add any available veggies for flavor and nutrients. Add a sprinkle of cheese or a dollop of sour cream if you like as well.
