The Food
This is the big Turkey week! I know most of you have probably already figured out your menu and you may have even gone grocery shopping— so on top of it you are! But, maybe you are a bit more like me and are trying to figure out the most obscure time to hit the very crowded grocery stores (I am thinking Monday about 9:45) for those final items. Which means, there is still a bit of time to share some of my easiest Thanksgiving dishes with you all.
Let’s start with the sides. The Triple Ginger Sweet Potatoes give an essence of ginger, but otherwise it is all about showing off the sweet potatoes. Extras of this dish are perfect seared into the Sweet Potato Pancakes with Pecan Butter & Ginger Pears for a weekend brunch.
Mashed Potatoes, while typically the glorious plain jane dish at my own dinner, can also get a bit of attention as the Horseradish Smashed Potatoes (skins on, please) or the Kale Mashed Potatoes. Leftovers of the potatoes become a vegan Seitan Shepherd’s Pie.
Salads do not make enough Thanksgiving appearances and it is the perfect last minute dish to add. When you make it with kale, you can dress and toss it the day prior. Two of my favorites are the Creamy Ginger Kale Salad and the vegan Chopped Kale & Pomegranate Salad. For a couple of non-kale salads, make the Roasted Pear & Beet Salad mostly ahead and then toss together at the very last moment.
Mushrooms are a lovely addition to the big day, especially for the non-turkey eating crowd. Try the Wild Mushroom Stuffing and slather it generously with the Vegan Mushroom Gravy.
Not everyone includes appetizers at Thanksgiving, but the Hazelnut Squash Dip with Fennel Crackers is a great item to take to any upcoming holiday parties, too.
The centerpiece of this day of gratitude can get a bit more glamorous as the Herb Roasted Turkey which is fun to pair with the naturally gluten-free Polenta Herb Stuffing and Italian Mascarpone Creamed Greens.
If you would rather celebrate the sea, the Salmon Wellington is a show-stopping, yet simple dish that is perfect to gather a meal around. Pair it with a Marsala Acorn Squash.
Finally, the Thanksgiving weekend is all about the leftovers… right!? Two of my favorites include the classic Turkey Salad Sandwich and a breakfast of Turkey & Greens Hash.
