Runny Eggs with Crispy Turnip Fritters & Greens

Shred and prepare the turnip fritters. The batter can be made the night prior. Just fold it together well right before searing into fritters. As the fritters are completed, place them separate on a baking sheet in a warm oven to stay hot. Once they are nearly complete, sauté the greens and sear the eggs. Serve the eggs and greens on top, so that the yolk can become a sauce for all of it.

Turnip Fritters

I originally created this latke style recipe with Spanish Black Radishes, so if you have those, this is an excellent recipe for it or any other root vegetables such as rutabagas, celery root, daikon or more. The key step is salting and squeezing the liquid from the vegetable. You could do this ahead by a day or two if that is easier as well.
