Sweet Potato Latkes with Applesauce & Pecan Butter

Every component can be made ahead for an easy party or breakfast. Simply warm the latkes just before serving, smear with the pecan butter, dollop with creme fraiche and applesauce. If you have a pomegranate handy a few sparkly seeds would be most appropriate on top.

Sweet Potato Latkes

These shredded sweet potato pancakes are perfect with a savory or sweet topping. A traditional dollop of sour cream and applesauce is nice as is savory smoked salmon or sweet pecan butter. These make ahead nicely as well. Unlike regular potato latkes, I do not salt these as there isn’t a lot of excess liquid in sweet potatoes. Makes these latkes a tad easier!

Applesauce

This is a quick, saute in their own juices applesauce that can be made just prior to eating. Juice helps sweeten tart apples, but if are starting with sweet apples, simply use water.

Sweetened with dates and flavored up with pecans, this delightful butter is perfect on sweet potatoes, pancakes or spread across your favorite baked good.
