Gruyere Apple Salad

The nutty flavor of Gruyere cheese matches so nicely with toasted nuts and apples and the entire thing is tossed with a simple tangy-sweet dressing.

Ingredients

  • ½ cup apple juice
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • 2 teaspoons maple syrup
  • 1 pinch salt
  • 3 cups lettuce, washed and dried
  • 1 carrot, peeled and shredded
  • 1 apple, thinly sliced in strips
  • ¼ cup gruyere cheese, shredded, about an ounce
  • ¼ cup sliced almonds, toasted*

Serving Size: 2 People



 

Preparation Instructions

Whisk together the apple juice, lemon juice, mustard, maple syrup, and salt. Arrange the lettuce in dishes or a salad bowl. Toss in the carrots, thinly sliced apples, shredded gruyere cheese and toasted almonds*.

*To toast the almonds, place in a dry pan over medium heat. Shake periodically until they are lightly toasted. Watch carefully as they can go from light to dark quite quickly.
