The Food
The first year of Lilly’s Table, I started a little tradition of dedicating this week in March to the president of the LT fan club. She is the one who gives me pep talks and endless love when challenges strike. Yup, she has been doing it since the moment I arrived on this planet. Fortunately for us, my Mom was not only was instrumental in my dedication to food, but she has a great palate that I can easily build a meal plan around.
Recently, while she was chatting on the phone with her grandchildren, I attempted to prepare and explain the lunch I was making which was a slight variation of this Mushroom Pasta & Tuna Casserole. I promised her the recipe. But, the best part of this dish is it is entirely dairy-free as it relies on this Silky Mushroom Soup as a substitute for the traditionally canned & processed cream of mushroom soup.
Start your week making a huge batch of the soup. It can go in a thermos to take for lunches. You can pair it with a simple salad of Caramelized Onion, Apple & Hazelnuts and crusty French Bread for dinner. And of course use it for the Tuna Casserole.
When my parents whip up a fancy dinner it is often a grilled fabulous cut of steak- so this time I am going to suggest the Peppercorn Crusted Steak with a big salad and Baked Potato. This year, I know my Dad is cooking because my Mom is currently nursing a broken knee cap. I am going to encourage him to try whipping together this Winter Wedge Salad with the rest of this scrumptious meal. (Got that Dad?)
Of course, if he is feeling a bit more adventurous, I am sure she would be pleasantly surprised by a Fondue served with the Gruyere & Apple Salad.
If you are in one of the snowy parts of the country this year, I am sure you are starting to dream a bit of spring. I am! I created this Dreaming of Spring Pasta Salad just for the blustery days and it is perfect paired with the End of Winter Salad.
This past January when my children and I were staying with my parents to help them with my Mom’s knee injury, I made a bunch of Eggs in a Hole for them. She quickly became a fan.
She also loves these happy little Seeduction Granola Drops and I know you will as well.
