Garbanzo Burgers with Roasted Beet & Blue Salad

Preheat the oven. Blend up the burger mixture. Peel and thinly slice the beets. As soon as the beets are in the oven, start to pour & sear the burgers. As they sear, whip up the dressing for the salad. Serve the burgers filled with your favorite toppings and the salad alongside.

Slices of beets are roasted into crisp, sweetness and tossed with leafy greens, blue cheese and a simple creamy sweet dressing.
