Smoky Caesar Salad

Smoked paprika is whipped into a Caesar dressing and drizzled onto a dark purple romaine. If you don’t have red romaine, green is fine. If you want your greens to have a red shade try red leaf lettuce instead. But, seriously any greens will do, even shredded kale or whatever greens you are receiving from the earth these days.

Ingredients

  • 1 clove garlic, finely minced
  • 1 lemon, juiced
  • 1 tablespoon dijon mustard
  • ¼ cup plain yogurt
  • ½ tablespoon anchovy fillet, optional or vegan worcestershire sauce
  • ½ tablespoon smoked paprika, more to taste
  • ¼ cup extra-virgin olive oil
  • ¼ teaspoon salt
  • 1 pinch black pepper
  • 1 head romaine lettuce, red is lovely, green works too

Serving Size: 2 People



 

Preparation Instructions

Whisk together the garlic, lemon juice, dijon, yogurt, anchovy paste/vegan worcestershire and smoked paprika. Slowly drizzle in the olive oil while whisking rapidly.

Season with salt & pepper to taste.

Wash and dry the romaine lettuce. Cut or tear into pieces.

Toss the lettuce with the dressing.

Sprinkle on extra parmesan cheese if desired when serving.
