Autumn is truly starting to fall all around us. The brisk mornings are leading to comforting foods that celebrate this week’s meal plan.

If you are swimming in dark leafy greens, from kale to collards or spinach to tat soi, the Indian Saag sauce is an unique way to gobble up your greens whether it is with Chicken + Rice or paired with a vegan Squash Dal.

Another option, the Smoky Roasted Garbanzo Beans, will float their way throughout that saucy goodness. The crunchy beans work well in several other dishes, too. Consider it an easy batch protein dish that can be served with a Smoky Caesar Salad and Brown Butter Fish or for lunch with a Chunky Tabbouleh Salad.

That Smoky Caesar Salad is lovely paired with the Savory Mushroom Crumble. Make a big batch of the dressing and this salad will become an easy repeat throughout the week.

Of course, we are also rolling into pumpkin + squash season. Cut up chunks of butternut become the Squash + Greens dish to top the Sage-Ricotta Pasta. Pair it with the Roasted Beet + Pear Salad for a beautiful meal that celebrates the harvest.

Prepare extras of the salad, for a lunch on the go of the Roasted Beet + Pear Salad with Cheese Toasts.

Double up the Squash + Greens to top leftover Brown Rice for a breakfast that is easy to complete with a sizzling Runny Egg on top.

As a final ode to the gorgeous fruit this time of year try the Baked Pear Oatmeal. Although, substitute any luscious fruit you can get your hands on, including apples, pears, figs or more.
