Brown Butter Fish with Smoky Garbanzos & Caesar Salad

1. Roast the beans.
2. Whip up the salad dressing and tear the lettuce. 3. As the beans start to appear crisp, begin to brown the butter. Make the fish.
4. Toss the salad and top with the beans. Serve the fish alongside.

Smoky Roasted Garbanzos

Smoked paprika livens up garbanozos. Cook until crisp but the insides are still a bit soft.

Smoky Caesar Salad

Smoked paprika is whipped into a Caesar dressing and drizzled onto a dark purple romaine. If you don’t have red romaine, green is fine. If you want your greens to have a red shade try red leaf lettuce instead. But, seriously any greens will do, even shredded kale or whatever greens you are receiving from the earth these days.

Brown Butter Fish

Just a bit of butter is cooked until the milky solids caramelize, creating a sauce that is both nutty & almost sweet. The sauce and fish are finished with a generous splash of lemon juice to further the tangy sweetness.
