Caramelized Onion & Broccoli

from Sun-Dried Tomato Meatloaf with Caramelized Onion-Broccoli , the Week of February 21, 2016.
View the next recipe for this meal.

Caramelized the onions into a deep golden, then fold in the broccoli. A splash of broth or white wine will bring them together in steamy goodness.

Ingredients

  • 1 teaspoon olive oil, or butter
  • 1 onion, large, thinly slice
  • 3 cups broccoli, florets
  • ½ cup white wine, or broth
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People

Preparation Instructions

Place the onion slices in a skillet and saute lightly for about 5 minutes. Reduce the temperature to medium-low and continue to cook down the onions for about 15 more minutes, tossing and stirring periodically.

When they are just starting to turn a deeper golden, add the broccoli florets and the white wine. Increase the heat to medium-high and steam, tossing periodically until the liquid is absorbed. If you prefer a more tender broccoli, cover it with a lid while it steams.

Season with salt and black pepper to taste.
