The Food
We are over halfway through Winter. For me, this often means my daydreams of fresh garden veggies deludes the reality of what is actually available. But, I find broccoli, cauliflower, onions, and beets easy enough to find to create delicious recipes.
French Onion Soup is rich, luscious and only onions are required. Beef broth is traditional, but not required, just use a flavorful vegetarian broth instead.
Caramelize more onions, add broccoli and toss them together for a simple side dish to pair with the Sun-Dried Tomato Meatloaf or use it as a topping for the Caramelized Onion + Broccoli Pizza.
For a beautifully simple salmon dish, make this seasonal Grapefruit Glazed Salmon with a dollop of Avocado Cream.
Call me silly, but even in the cold season, I crave salads. Maybe for the convenience or crunchy goodness or tasty nourishment; Winter produce can offer some interesting variations. The Avocado, Pear + Spinach Salad, Citrus + Beet Salad, Red + White Quinoa, Avocado-Garbanzo, Mustard Seed Marinated Cauliflower, Gruyere Apple Salad and Garbanzo-Brisling Salads can be mixed and matched for simple meals on the go or a dinner tossed together easily.
For breakfast, the Sunflower Fig Oatmeal or Tortilla Egg Wrap will each brighten up the start of your day.
Cook seasonally. Eat consciously. Live well,
