Sun-Dried Tomato Meatloaf with Caramelized Onion-Broccoli

1. Put together the meatloaf and toss in the preheated oven.
2. Slice the onions- start caramelizing on low heat.
3. After adding the tomato sauce to the meatloaf and placing back in the oven, toss the broccoli in with the onions and cook.

Sun-Dried Tomato Meatloaf

Italian herbs, pine nuts & sun-dried tomatoes liven up this meatloaf, which works well with ground bison, beef or even turkey. When using oats, you can skip the typical breadcrumbs. Plan to use quick-cooking oats. If you only have rolled oats, toss them in your blender for a few seconds. If you do not have a loaf pan handy simply mound it up and form it into a log in the center of a baking dish.

Caramelized the onions into a deep golden, then fold in the broccoli. A splash of broth or white wine will bring them together in steamy goodness.
