Asparagus Brie Frittata

Delightful brie and fresh asparagus come together in this simple frittata. This is a great time to use a cast-iron or oven-proof pan, but a skillet with a lid will do in a pinch.

Ingredients

  • 1 tablespoon butter, unsalted
  • ½ lb asparagus, trimmed and halved
  • 4 eggs, beaten
  • ¼ teaspoon salt
  • 1 pinch black pepper
  • 2 ounces brie cheese, sliced thin

Serving Size: 2 People



 

Preparation Instructions

Melt half of the butter in a skillet over medium heat. Toss in the asparagus and saute lightly until the edges are slightly golden.

Beat the eggs and add the salt + pepper. Spread the asparagus out in the pan and rub the remaining butter in the edges.

Pour in the beaten eggs. Lay the brie on top. Either cover with a lid and reduce the heat to low for the cheese to melt or heat up your broiler and broil for just 1-2 minutes until the cheese is golden.

Serve in wedges while hot.
