Roasted Spring Onions & White Beans with Grilled Zucchini, Polenta & Fresh Tomato Sauce

Preheat the oven. Slice and prepare the onions for roasting. Soak the skewers. Heat the grill. Slice the zucchini and polenta. Dip each one in olive oil, salt and pepper. Place the polenta on the grill. Thread the zucchini onto the skewers and place on the grill. While they grill, chop up the tomatoes and fresh basil. Toss the white beans in with the Spring Onions and finish cooking. Serve the Spring Onions & White Beans, Grilled Polenta, Zucchini and covered with Fresh Tomatoes & Basil.

Spring onions, cipollini or even shallots can all work to add a beautiful rustic flare to white beans. Take this a step too far by soaking and cooking your own white beans from dry beans, it is worth it.

Grilled Polenta

Crisp on the outside and soft in the middle- grilled Polenta is a unique gluten-free side for a barbecue. Start with prepared Polenta which comes in tubes usually sold near pasta. Alternatively, make your own from scratch, chill it overnight and cut it into pieces to grill.
