Ginger Pear Corncakes

Whisk the cornmeal and boiling water together. Allow to cool. Finish the batter and start searing them into pancakes. While they sear, slice the pears and toss in a separate skillet with the ginger. Serve the pears on top of the Corncakes with a sprinkle of nuts or dollop of yogurt for bit extra protein, if desired.

This scrumptious cornmeal pancake has just a few ingredients. Tasty as a simple starchy side at dinner or as a gluten-free pancake in the morning. This base recipe would work well with berries or even something spicy mixed in along a chili or such. The photo is with blue corn.

Ginger Pears

Slightly spiced, these pears are melted together with a touch of ground ginger. Feel free to peel the pears. We keep them on for the bit of extra fiber.
