Nacho Cheese Dip, Black Bean, Pico de Gallo & Chips

Roast up the squash. While it cooks, chop up the tomatoes, onions, cilantro and whip up the bean dip. As soon as the squash comes out, toast up the chips if making from scratch. Finish up both dips and then serve.

Squash Nacho Cheese Dip

Try this squash based dip instead of that chili dotted, processed cheese stuff so often used on nachos. The orange squash gives it color & a smooth texture, not to mention beta carotene and other great nutrients. Use a strong, sharp cheddar which will add a ton of flavor without needing to add a lot of cheese. If possible, use frozen hatch chili, but a can is an okay substitution when they are out of season.

Whip up this dip and serve hot or cold as an easy lunch or tasty snack. A Hatch Chili is an anaheim chili that has been roasted. If you cannot find them fresh or frozen, canned green chilies work as well.
