1. Start with the black-eyed peas.
2. When they are almost done and starting to simmer, work on cooking up the collard greens.

*Add cornbread for an authentically complete meal. We don’t add if ourselves, as we feel there is plenty of carbohydrates with just these two recipes.

Black-Eyed Peas

Prosperity. Luck. We all could use a bit more in the New Year and black-eyed peas signify all of it. Ham or bacon supposedly adds ‘positive motion forward’ since the pig is a front footed animal, but leaving it out and adding a dash of smoked paprika is tasty (and dare I say: lucky!) as well. Dry black-eyed peas take about 20-30 minutes to cook, but if a can of beans is easier for you— go for it.

Wilted Greens

Saute hearty winter greens such as kale, chard, or collards with a splash of oil until they wilt and sigh into tenderness.
