Roots, Shoots, + Lentils with Citrus Avocado Salad

1. Roast up the vegetables.
2. Cook the lentils.
3. Make the salad dressing and toss together when all is cooked.
4. Wash and dry the lettuce.
5. Cut up the citrus, make the dressing.
6. Cut up the avocado, assemble the salad.

Roots, Shoots & Lentils

Roasted roots, wilted greens and hearty lentils are tossed together, perfect served warm or cool as a salad. Any lentils will do but the photo is taken with green French lentils.

Citrus Avocado Salad

Citrus and avocados are that charming couple you see waltzing around wearing bright colors on a dreary winter day. Toss them together with a drizzle of tangy dressing and pile of itty-bitty greens. It is an ode to sunny summer that is technically more in season in the darkest months.
