Week of January 22, 2017

January seems to be ushering us into 2017 without any delay. Ready or not! As my family’s local food year pushes past the half way point we are diving into our stored vegetables. Lucky for you this week’s meal plan is balanced with fresh citrus and creamy avocado, too.

Loaded with veggies and protein, the Roots, Shoots + Lentils dish can be served steamy hot for dinner or as a cool salad the next day. Serving it with the Citrus Avocado Salad makes this simple dish a bright and shiny meal.

Another lentil packed dish is the Warm Lentils + Balsamic Beets. Serve it with Nutty Quinoa for a lunch on the go that will carry you through the week.

Grapefruit glistens this time of year and is especially beautiful in the Grapefruit Salmon. Serve it with Ginger Turnips and maybe a bit of
French Bread to soak up any extra of either sauce.

The Orange Broccoli Beef Stir Fry simply requires an easy marinade for the beef, then it is a toss of broccoli, oranges in a hot skillet.

For a bit of Italian inspiration, try the White Bean Stew with Arugula Salad and Cheese Toasts. My kiddos devour this. It is great vegetarian, but sausage goes well with it, too. The Pasta Bake with Garlic-Walnuts and Kale Caesar with Homemade Croutons is a comforting meal perfect for this time of year.

Having snacks around is helping my personal sanity at home. The Beet Hummus with Crackers and Veggies is quick to grab for a nibble or a lunch. The Lime-Coconut Date Bars are ideal for a post-workout treat or breakfast.

Meanwhile, the Peanut Butter Banana Granola and Peanut Butter Smoothie satisfies all the silly monkeys in my life, for breakfast or after school!
