Broccoli, Brie & Apricot Jam Scramble

This playful combination is a fun twist on an easy egg scramble. A saute of onions & broccoli are scrambled in with eggs and finished with chunks of brie, toasted almonds and a dollop of apricot jam. Substitute another type of jam, such as a peach or marmalade if you cannot find apricot.

Ingredients

  • 1 teaspoon butter, unsalted
  • 1 onion, small, finely chopped
  • cup broccoli, small florets
  • 3 eggs, beaten
  • 2 tablespoons milk
  • 1 pinch salt
  • 2 ounces brie cheese, cut into pieces
  • 2 tablespoons apricot jam
  • ¼ cup sliced almonds, toasted if desired

Serving Size: 2 People



 

Preparation Instructions

Place the butter in a skillet over medium heat. Add the onions and saute lightly for about 5 minutes until wilted. Toss in the broccoli and a splash of water. Steam and saute for 5-8 minutes until the broccoli is just tender and the onions are considering caramelizing.

Pour in the eggs and milk. Fold and toss. When the eggs are almost cooked through, toss in the brie cheese, apricot jam and toasted almonds.
