The Food
This is my favorite meal plan of the year to write. It is this period where each of us is ready to shed winter, but spring isn’t exactly ready for us. It is also the week that my dear sweet Mom was born and I love writing up this meal plan as I day dream of all the food I would cook up for her if we lived closer together. The Dreaming of Spring Pasta Salad with Pan Grilled Chicken seems an especially lovely dish for my Mom who has received an unusual amount of snow over the recent months. I know she is ready to dig in her garden and this veggie heavy dish will take her there.
Another vegetable focused dish is the Roots, Shoots, + Lentils. Actually, you could save time in your week by cooking the veggies for this and the pasta dish on the same day. I like to pair this with the Citrus Avocado Salad. When my mother was pregnant with me she ate a ton of avocados and what a beautiful bright way to celebrate that early lesson of loving up the creamy fruit.
On the other end of the spectrum, she loves mushrooms… and me? Not so much. That being said, I would celebrate the opportunity to bake up this Savory Mushroom Crumble and eat it alongside her. Since she lives in the apple state of Washington, either the Gruyere Apple Salad or the Apple Blue Cheese Salad would pair beautifully.
Speaking of celebrations, a birthday party for my Mom calls for some cheese dipping fun by way of the classic Fondue. Right!? One of the apple salads above is about all you need for a complete meal.
Living in the Pacific Northwest meant I ate a lot of (amazing!) Salmon with Cucumber Sauce. Pairing it with Mashed Potatoes and a simple Green Bean Almandine takes me right back to my parents dining room table.
Pate. Whether it is fancy enough to be homemade or it is in more of the liverwurst style, it is another shared food love of both of us. Spread on a sandwich with a touch of marmalade or apricot jam makes for an elegant meal on the go. Extras of the jam can play for a breakfast of the Broccoli, Brie and Apricot Jam Scramble.
Another lunch is a dish my Mom seems to craft effortlessly. From the pinched together Whole Wheat Pie Crust to the chop and dump filling, this Chard Quiche is for any meal of the day.
For the big finish! I would make a Homemade ‘Nutella’, Homemade Crepes and spread them altogether in a fancy-schmancy way that makes you a tiny bit less sad knowing your Mom is about to head off to France without you!
By the way, did I mention she has been married to my sweet Dad for 50 years?
