The Food
With a little Irish luck and a wee bit of planning, you could dedicate your entire week of meals to the Emerald Isle. Making bread may not be on your to-do list normally, but this Irish Soda Bread is easier than whipping up a dozen muffins. Several dishes this week will benefit from it as well, including the Silky Mushroom Soup, the Corned Beef Sandwiches, the Sweet + Sour Grilled Cheese and a full-on Irish B&B style breakfast with Shamrock Butter, Scrambled Eggs and Baked Beans.
The Sweet & Sour Cabbage plays well in the vegetarian dinner that features Baked Beans and the classic Colcannon, aka Kale Mashed Potatoes. Extras of the mashers can become a topping for the Vegan Lentil Shepherd’s Pie the next day or Kale Potato Pancakes.
Of course the week would be incomplete without the classic Irish-American dish of Corned Beef + Cabbage. This recipe cooks it up in the crockpot for the day. Got leftovers? A breakfast of Corned Beef Hash or these Corned Beef Cabbage Rolls that are not officially included in the meal plan, but are a beautiful way to fancy up leftovers.
For another loverly dish, take sorrel, which is popping up recently as the soil warms up and has botanical similarities to the shamrock. Hence, I have taken some liberties to make it into a Shamrock Butter to dollop on Scrambled Eggs. Another use is as a silky sauce to pair with fish in the Salmon Sorrel.
