Winter

Winter Greens Butter

from Creamy Herb Scramble, the Week of April 16, 2017.

A winter twist on our basil Pesto Herb Butter. Instead of fresh summer basil, try using a bitter arugula or mustard green which will play so nicely with sweet butter, cream cheese and garlic.

Ingredients

  • 1 cup arugula, or mustard or other bitter greens
  • 1 clove garlic
  • 4 ounces cream cheese
  • 4 tablespoons butter, unsalted, room temperature
  • 1 tablespoon extra-virgin olive oil, or more if needed
  • 1 pinch salt, to taste

Serving Size: 2 People



 

Preparation Instructions

If using a Food Processor (my preference):
Dump it all in and pulse until evenly blended. Scrape occasionally as needed.

If using a blender:
Whirl the garlic & olive oil first. Add the greens. Pulse a few times. Add the remaining ingredients. Plan to un-stick the blender a few times and if necessary drizzle in a bit more olive oil if it needs more liquid to start blending everything together.

If by hand:
Make sure the cream cheese and butter are soft. Finely mince the garlic and greens. Whip and beat together until smooth and evenly green.
