Mix & match your vegetables as the season allows. This is a great way to use up leftover roasted or even grilled vegetables. Beans complete the meal, but feel free to add chicken or cheese if you like. If you skip the chicken, add more refried beans instead. Make a ton of these and freeze them to enjoy later or even on the go.

Rocket Date Salad

Rocket, better known around here as arugula has a spicy, slightly bitter bite. Melting dates & oranges together into a syrupy, sweet dressing balances the peppery rocket even allowing it to wilt slightly. The creamy goat cheese makes this salad dessert-like. We tested the recipe with blood oranges, but regular oranges will work perfectly too.

Roasted roots, wilted greens and hearty lentils are tossed together, perfect served warm or cool as a salad. Any lentils will do but the photo is taken with green French lentils.

Rosemary Azuki Beans

Azuki beans cook up fairly ‘fast’ compared with other dried beans, but that still means about an hour. Simmering with a huge stalk of rosemary gives them a more romantic flavor. If you want to skip straight to the can, just toss the beans with the garlic-herb oil at the end instead of simmering.
